From the Kitchen to HBO: The Chef Behind a Dallas Cowboys Hard Knocks Moment
There are certain moments in your career that make you stop and think about how far the kitchen can actually take you.
For me, one of those moments involved a kitchen, an NFL rising star, the Dallas Cowboys, and cameras from HBO.
In 2021, I made an appearance on HBO’s Hard Knocks: The Dallas Cowboys while cooking for young star CeeDee Lamb.
And looking back, it remains one of the coolest and most unexpected moments in my journey as a chef.
Because I wasn’t just cooking.
For a moment, the work happening in the kitchen became part of the bigger world of professional football—and that was something I’ll never forget.
When the Kitchen Met the Cowboys
Being a chef already puts you close to some incredible experiences.
But working around professional football is a different kind of environment.
As a sports chef, the food has a purpose. It isn't simply about putting something good on a plate. It’s about fueling an athlete and understanding that food plays an important role in their world.
During my time cooking for CeeDee Lamb, I found myself navigating one of the most unusual challenges of that period: fueling an athlete during COVID.
And then there was an added complication.
He couldn’t taste the food himself. 😂
For a chef, that’s definitely a situation that makes you think differently.
Taste is such an important part of cooking. It’s how you adjust, refine, and make sure everything is where you want it to be.
But circumstances were different.
It was a reminder that working in sports nutrition doesn't always come with a perfect set of conditions. Sometimes, you have to adapt to the circumstances in front of you and continue doing your job.
And that was part of what made the experience so memorable.

A Glimpse Behind the Scenes
Then there was the fact that this experience was being captured for HBO’s Hard Knocks: The Dallas Cowboys.
Suddenly, the work of a chef was being seen alongside the world of the Dallas Cowboys.
For me, that was special.
Not because being on television was the goal.
But because it offered a glimpse into something I’ve always believed about this career:
The kitchen is only the beginning.
The work of a chef can take you into places you never expected.
It can put you around professional athletes. It can connect you to sports. It can become part of entertainment and media. And it can introduce people to the role food plays behind the scenes.
That’s what this moment represented to me.
Cooking for an NFL Rising Star
CeeDee Lamb was a young star in the NFL, and being the chef cooking for him during this period gave me another perspective on what it means to work in professional sports.
Athletes have unique demands.
The game demands a lot from them, and food becomes part of the larger equation of how they prepare and perform.
That’s why I’ve always viewed sports cooking as more than simply preparing meals.
It requires understanding the person you’re cooking for and recognizing that what happens in the kitchen can support what happens when they step into competition.
That responsibility is something I take seriously.
But it’s also something I enjoy.
Because this is where my worlds come together:
Food. Sports. Performance. Culture.
From the Kitchen to HBO
Seeing my work become part of Hard Knocks was one of those moments where I could look at my journey and appreciate just how far this career had taken me.
A chef in a kitchen.
Cooking for an NFL player.
Behind the scenes with the Dallas Cowboys.
And appearing on one of the most recognizable sports documentary series.
It was unexpected.
It was unforgettable.
And it was a reminder that you never really know where your craft can take you.
That’s one of the things I love about being a chef.
The kitchen gives you the foundation.
But your opportunities can extend far beyond those four walls.
When Food Meets Football
Sports and food have always had a natural connection.
Athletes need fuel.
Teams need preparation.
And behind every performance is an entire ecosystem of people helping athletes do what they do.
As a sports performance chef, I get to be part of that ecosystem through food.
But experiences like Hard Knocks showed me another side of it.
Food can also become part of the story.
It can become part of the entertainment.
It can become part of the culture surrounding sports.
And sometimes, it can even take you from the kitchen to HBO.
The Bigger Vision
That 2021 experience is still meaningful to me because it represents more than one television appearance.
It represents the direction I’ve always wanted to take my career.
I want to continue working where sports, food, culture, entertainment, and performance intersect.
I want to keep creating, keep learning, and keep finding new ways for culinary work to become part of bigger experiences.
Because I don't see being a chef as something confined to a traditional kitchen.
I see it as a platform.
A way to connect with athletes.
A way to contribute to sports culture.
A way to collaborate.
A way to bring people together through food.
And a way to take the craft somewhere bigger.
Wherever the Game Takes Me
When I think back to that Hard Knocks experience, I think about how unexpected the journey can be.
You start with the craft.
You put in the work.
You keep showing up.
And eventually, the kitchen can take you places you never imagined.
For me, that meant cooking for CeeDee Lamb and finding myself part of HBO’s Hard Knocks: The Dallas Cowboys.
It was one of those moments that made the bigger picture a little clearer.
From the kitchen to HBO, I’ll keep bringing the flavor wherever the game takes me. 🏈🔥
